For a healthy twist on a classic dish, this shepherd’s pie is made with rutabaga instead of potatoes. It is an awesome recipe that leaves us feeling satisfied and energized. Since rutabagas do not send our blood sugar levels on a roller coaster ride like starchy white potatoes, this recipe leaves us feeling full and content until our next meal.
The warm freshness of the rutabaga, combined with flavourful ground beef, and a hint of apple makes this meal one of our favourite winter comfort foods.
What you need:
1 pound ground beef
2 Tablespoons honey
1 Tablespoon cinnamon
What to do:
Cook ground beef and then place it in the bottom of a 9×13 inch baking pan. Peel and dice turnips. Cook in water until soft. Drain, and mash with a potato masher. Peel, core, and slice apples. Mix apple slices with cinnamon. Layer half of turnip mixture on top of cooked ground beef in the baking pan. Lay apple slices on top. Cover apples slices with remaining turnip. Sprinkle some cinnamon and sea salt on top then drizzle honey over everything. Salt to taste. Bake at 325 until apples are soft, approximately 40-50 minutes. Enjoy!
