Honey-Glazed Spaghetti Squash

11/11/2013 — 1 Comment

This is a tasty side that we serve several times per week at our house.  Our little guy really loves the fun texture of the spaghetti squash and he enjoys playing with it as he eats it.  One of our favourite quick fall meals is combining 1 pound of cooked ground beef with this recipe for a complete casserole that our whole family enjoys.                  spaghetti squash

What you need:

1 spaghetti squash

1 carrot grated

3 Tb honey

What to do:

Cut squash in half and remove seeds.  Place face-down in a shallow baking pan.  Add a small amount of water to the pan to prevent the squash from sticking.  Bake at 325 for approximately 45 to 60 minutes until the squash is soft.  Remove from oven and remove the squash from its skin with a fork.  Add the grated carrot and drizzle with honey.  Serve hot or cold.
