Fast and Fun Chicken Nuggets

These chicken nuggets are one of my most clever creations in the kitchen.  Not only are they fast to make and fun for my little one to eat, they are also extremely healthy.  They are grain-free, dairy-free, and soy-free.  They can also be made egg-free by substituting applesauce.  Also, they freeze really well and thaw quickly, making them really convenient to eat at home or on-the-go.  And the best part is, they are one of my little one’s favorite foods!

What you need:

Cooked chicken (or turkey) pieces

1 or 2 beaten eggs (or a few tablespoons of applesauce)

Sea salt

What to do:

Preheat oven to 325 degrees.  Put the cooked chicken through the food processor until it is shredded into tiny pieces.  Transfer chicken to a bowl and add 1 – 2 beaten eggs (or applesauce) and stir until the mixture is the consistency of playdough.  Shape into small balls and place on baking pan lined with parchment paper.  Flatten with a fork.  Sprinkle with a little sea salt.  Bake until the egg is cooked and they are a golden brown, approximately 20-30 minutes.  Enjoy!
